Chili Mac
This recipe is a quick and tasty homemade version of Hamburger Helper. You can cut your prep time by using the box stuff or you can go so far as to cook your own macaroni and cheese - either way it’s a cozy meal for the whole family.

Ingredients
3 tbsp olive oil, divided
1 pound ground turkey
1/2 yellow onion, diced
2 tbsp chili powder
1 tsp ground cumin
2 cloves garlic, minced
2 cans (15.5 oz each) pinto beans, undrained
2 cans (15.25 oz each) diced tomatoes, undrained
1 can (15.25 oz) sweet corn, undrained
1/2 tsp salt
1/2 tsp pepper
2 boxes (12 oz each) deluxe macaroni and cheese (or, if you prefer, your own homemade macaroni and cheese)
Steps
1) Heat 2 tablespoons of oil in a large pot on medium heat. Add the ground turkey and saute for 5 minutes or until the turkey is browned and cooked through. Transfer the turkey to a plate and add the remaining 1 tablespoon of oil to the pot.
2) Add onion, chili powder, and ground cumin. Saute for 3 minutes, then add garlic and saute an additional 30 seconds. Add the beans, tomatoes, corn, and cooked turkey. Season with salt and pepper, stir well to combine.
3) Bring to a boil, then lower to a simmer. Cook for 1/2 hour, stirring occasionally.
4) This is where you’d cook the macaroni and cheese according to the package if you’re using the boxed stuff. If you’re using your own, make sure it’s ready!
5) To serve, ladle macaroni into bowls and then stir in the desired amount of chili. Refrigerate any leftovers separately to avoid everything getting soggy.
