Smoked Gouda Mac and Cheese

Total Prep Time: 40 minutes | Servings: 8 | Preheat Oven: 375*F

Ingredients

12 ounces macaroni noodles
4 tbsp butter
1 yellow onion, diced
1 tbsp flour
1/4 tsp mustard powder
1/4 tsp black pepper
1/4 tsp salt
1 1/2 cups milk
8 oz gouda cheese, shredded
2 oz cheddar cheese, shredded
4-6 oz gouda or cheddar cheese for topping

Steps

1) Grease a 9x13 inch casserole dish. Cook macaroni noodles according to package.

2) Melt butter in a large saucepan over medium heat until translucent.

3) Stir in flour, mustard powder, pepper, and salt. Let the flour cook, stirring often, for 1 minute.

4) Slowly pour in the milk while whisking continuously (you’re making a roux!). Add in 8 ounces of gouda and 2 ounces of cheddar, then stir until melted.

5) Remove from heat and stir in the drained macaroni noodles, then transfer to the casserole dish. Top with the remaining cheese and bake 20-30 minutes until the cheese is melted and lightly browned.
